5 Easy Dinners for Busy Mums (That Take Under 20 Minutes)

Some evenings, cooking dinner feels impossible.

Between school runs, endless snacks, laundry mountains, and trying to keep tiny humans alive, spending an hour in the kitchen just isn’t happening.

So here are 5 easy dinners I actually rely on when life feels chaotic.

No fancy ingredients. No perfection. Just quick family meals that get everyone fed.

1. Cheesy Pasta & Garlic Bread

This is my emergency dinner.

Boil pasta, stir through a jar of tomato sauce, sprinkle loads of cheese on top, and serve with garlic bread.

If I’m feeling productive, I throw in frozen veg.

Time: 15 minutes

2. Chicken Wraps

Cook pre-cooked chicken strips or leftover chicken, throw into wraps with lettuce, cheese, mayo, and whatever random bits are in the fridge.

The kids think it’s exciting because they can build their own.

Less complaints = win.

Time: 10 minutes

3. Sausage Tray Bake

Throw sausages, chopped potatoes, peppers, and onions onto a tray.

Drizzle with olive oil, season, and shove it in the oven.

Minimal effort. Maximum reward.

Time: 5 mins prep, 20 mins cooking

4. Homemade Pizza Toasts

Bread + pizza sauce + cheese + toppings.

Stick under the grill until crispy.

Honestly one of the easiest fakeaways ever.

Time: 10 minutes

5. Egg Fried Rice

Perfect for using leftovers.

Cook rice (or cheat with microwave rice), fry with egg, frozen peas, soy sauce, and any leftover chicken.

Cheap, quick, and surprisingly good.

Time: 15 minutes

Final Thoughts

If you’re a mum trying to survive the dinner chaos, quick meals are sometimes the only option.

And that’s absolutely fine.

Fed is fed.
